Happy Happy Thursday Bimbos! I wanted to share another one of my favorite recipes with you! It's extremely easy. It fills you up and totally gives you the satisfaction of eating enchiladas without even using any tortillas! This recipe takes about 5 minutes to prep and 25 minutes to bake! And according to our BFF Meg, it's delicious ((although she has to say that since she's my best bimbo))!
Here's what you'll need: 2 Boneless Chicken Breasts 1/2 Can of Las Palmas Enchilada Sauce (Green or Red - I prefer red because it looks prettier) 2 Cups Frozen Peppers (or fresh chopped, I'm just lazy) 2 oz Shredded Low Fat Mexican Cheese Blend 1 4 oz can of diced Jalapenos 1/2 Onion diced A baking dish (I use disposable aluminum tin foils, easier to clean up!) | Baking Instructions: Heat your oven to 375 degrees. Lay your Chicken Breasts inside your baking dish. I like to salt and pepper my chicken just a bit. Then add in the frozen (or fresh...) peppers to surround the chicken. Cover the chicken with the diced jalapenos and diced onions. Open your can of enchilada sauce and lightly cover both breasts and frozen peppers. Bake your chicken for about 20-25 minutes or until tender! For the last 5 minutes top with cheese and let it bake! // Serves 2 Bimbos! |
