So for those of you Bimbos who don't know, I'm a Mexican (Thanks Dad ;)). Which means, I love my salsa & I looooove me so spicy food! One of my favorite things to make is Pollo Con Salsa ((or, Salsa Chicken for you nonspanish spearkers)). It's super simple and tastes great alone or thrown on top of a salad. So here's my recipe:
Ingredients:
1 Tbsp. EVOO (or evoo spray)
Onion (I like mine chopped up into REAL small pieces)
1 garlic clove
Salsa with NO added sugar (I love anything Casa Sanchez)
2 Chicken breasts
1 Zucchini
1 Red Bell Pepper
First, chop up all your veggies and garlic. Then throw them into a skillet over Medium Heat, cook and stir occassionally about 8 minutes. Then add your chicken breasts. After they are completely cooked, I take two forks and shred my chicken. Once it's pulled apart take 1-2 cups of salsa and add it to the skillet (I usually add some hot sauce as well)! Continue to cook for about one-two minutes. Or until Salsa is warm. Serve and enjoy! Yields about 2-3 servings.
