Happy Hump Day Bimbos! It's Wednesday and we are feeling wild. Although we would love nothing more than to run down to our local Buffalo Wild Wings (Hi Omar!), grab a mid week cocktail, and obvi some greasy grub, we have decided to stay in for the night. I'm sure our wallets and our hopefully shrinking stomachs are silently thanking us. Instead we decided to grab a few of our favorite ingredients and prepare dinner in. Definitely a more savings/bloating friendly option. We thought we should share our yummy and easy recipe.
Taco Salad, Bimbo Style!
Here's what you'll need:
One bag of Lettuce (Gab prefers romaine)
1/4 of an onion
1 clove of Garlic
6 oz. Extra Lean Turkey Meat
1 Cup Frozen mixed Peppers
1 Cup Black Beans
Salt/ Pepper
Salsa
First: chop up some onion and garlic, put in pan with EVOO spray (THANK YOU, Trader Joe's)
and cook on medium/medium high.
After the onions/garlic cook down a bit, add in your 6 oz. ground turkey meat. Add in the frozen peppers and let everything cook together. Salt/pepper to taste.
Cook beans in a small pot. We heat ours on Medium heat (you can also stir in a can of chopped jalapenos for some added heat.)
While both of those are cooking, rinse your lettuce! Then plate it.
After the beans/ground turkey are finished, add them to your lettuce and top with salsa.
Serves 2.
This recipe is extremely easy and does not take a lot of time to make. Perfect for those of us who are working late or just not in the mood to cook. With the salsa on top we don't even miss the cheese we wish we were eating! Happy Eating Bimbos!
